This high altitude (>1600m) beauty contains Caturra, Boubon, and Catuai varietals that bring chocolate, cherry, almond, and hints of raspberry to the cup. The structure is clean, bright, and balanced. This bean presents well in all of the classic formats (espresso, french press, drip, and pour over), but we think pulling this into an espresso shot creates something special.

NORTH SHORE POUR (V2)

Notes on Tastes & Cup Quality:

This bean is our second installment in the "North Shore Pour" and is a wild child compared to the Sidamo. Allowing the bean's outer "cherry" to dry on the outside after harvesting (natural / dry processing) turns this into a fruit forward berry bomb. The chocolate-covered blueberry notes of this roast have made it our favorite offering. Pour over format rounds out the edges, but French press really let's you experience the sweet, rustic, layered fruitiness that this bean has to offer.

If you love a clean cup with delicate layers this roast will become a staple in your kitchen or coffee shop. The 'aroma ride' starts with chocolate up front, citrus in the middle,  and maraschino cherry as the finish. This high-altitude Ethiopian is like drinking a chocolate candy bar for breakfast.

Heading up our "Third Coast Roast" line, is a gorgeous varietal from the Planadas estate in Tolima Columbia. This medium roasted bean presents a dark chocolate backbone with cherry and peach highlights. It's hard to put down this drink-all-day "session" coffee.

Derek Smith

DARKSTAR Roastery was born of humble beginnings. Its founder, Derek Smith, combined his obsessive search for the perfect espresso with his love of science and manufacturing. Having spent the last 16 years in Pharmaceutical R&D, he also brings a healthy dose of 'scientific-nerdery' to DARKSTAR and continues to push our roast quality to new levels. Derek is Canadian by birth, so he smiles a lot, is super nice, and loves maple syrup. 

In his free time, Derek enjoys hanging with his three kids (Aidan, Lyla, and Chloe), stand up paddle boarding, playing ukelele, going to summer music festivals, and drinking copious amounts of red wine. He loves that his coffee obsession has become a business, and hopes his passion for craft roasting comes through in every cup of coffee.

Tiffany Smith

Tiffany (aka - Derek's better half) is the glue that keeps DARKSTAR together. She hails from Indiana and is a graduate of Indiana University - Bloomington (go Hoosiers!). Tiffany's professional background as a business lawyer and advisor, and her amazing ability to connect with people make her a magical ingredient here at DARKSTAR. And of course, she is a hard core coffee connoisseur so she ensures that we bring only the best roast profiles into production. 

When not chasing three kids and her wiley husband, she enjoys listening to live music, exploring the outdoors, traveling, and testing the human threshold for caffeine consumption.

Do you have an upcoming event and want REALLY good coffee and service? We can bring regular drip coffee, provide individual pour over service, or even bring an espresso machine to your event. And if you really love your guests we can also arrange to send them home with some DARKSTAR coffee beans.
